Ingredients you need to have available:
1 Apple, peeled and cut into small cubes
1 egg
1/4 cup coconut flour
1/4 cup gluten free flour
1/4 cup maple syrup
2 tablespoons of coconut milk
2 tablespoons of coconut oil, melted (2 parts)
1 teaspoon cinnamon
1 teaspoon baking powder
1 teaspoon vanilla
Instructions to make:
Preheat oven to 375 degrees. Line a baking sheet pan with parchment paper. In a bowl, combine coconut flour, gluten free flour, baking powder and cinnamon. In a separate bowl, beat the egg, add maple syrup, vanilla and 1 tablespoon coconut oil, stir and mix well. Combine the egg mixture with dry ingredients, then fold until combined. Use a small ice cream scooper to scoop the batter onto the baking pan. Bake for 10 minutes and then when it’s firm, brush with the remaining coconut oil. Now bake for another 15 minutes or until golden brown.
